Food from last week

It has been a while since my last post! I’ve been tweeting, since I started using twitter again as a companion for this blog. Posting a tweet takes sooo much less work than maintaining a real blog! I went to Oregon for a boogie (skydiving event) on Friday, totally unplanned. The next post will be all about how impossible it is to stay paleo at those things! I’ll have to edit some video to share with you guys as well. I started a 30 day paleo challenge yesterday after 3 days of really crappy eating at the boogie. I feel like the entire month of August has been a struggle for me, so I think it would be great for me to commit to a month of eating fully paleo. Let’s see how long it lasts. Day 1 went great yesterday.

Before the boogie, I was doing pretty well getting back to normal and making paleo meals for myself. So these are some food pics from last week.

Grassfed ribeye with 4 different kinds of squashes and onion
I’ve decided that my greatest cooking tragedies always involve overcooking meat because I’m so easily distracted. This was the first time in a very long time that my steak didn’t come out perfectly medium rare. It was well done! Hardly any pink. What  a complete waste of meat, right? But it was tender enough that I could still enjoy it. Just not as much as if it would have been red-pink in the middle!

Korean food without rice– bulgogi, kimchi, and banchans
So this isn’t fully paleo because there is soy sauce in the marinade for the bulgogi (Korean marinated beef), but I don’t mind having soy sauce here and there. Banchan = side dishes. Here we have kimchi, cucumber onion salad type thing, zucchini, and eggplant.

This was a salad from the bar at one of my absolute favorite restaurants. I don’t even know where to start with describing how delicious this salad was! I particularly enjoyed the turnips. The turnips!! Who would’ve thought! I’ve always loved their lavender duck and the hazelnuts were perfect. Definitely try this if you’re in the area.

WHY did I eat/drink that?!?

There’s nothing like waking up in the morning horrified at what you consumed the day before… Or in my case, the previous 4 days. Yep, I was off the paleo boat for FOUR days, which is pretty unusual for me since I absolutely hate how I feel when I don’t eat 80-100% paleo. In fact, I feel absolutely deplorably wretched right now. 1. My stomach hates me. 2. Forget my stomach, my entire body hates me. 3. I’ve gained at least 5lbs of water weight and I can feel it.

The last several days have been filled with obnoxious amounts of sugar and salt from all sorts of non-paleo foods. I’ve also eaten my weight in fruit and almonds because I was bored from being too lazy to do anything. Then there’s the alcohol. SO. MUCH. ALCOHOL.

In my current delirious state of post-traumatic eating episodes, the only clear thought I have is: How did I live like that for so many years?!? How do the majority of people still live like that?!? I think this feeling of lethargy and ill-health might just be the accepted norm for people who haven’t experienced a life free of grains and alcohol.

I went to my friend’s wedding on a beautiful Friday afternoon. It was the shortest ceremony ever! As soon as I saw the cupcakes, I knew that my willpower to stay paleo was weak. I have such a soft spot for cupcakes!

I think I ate two, possibly three. I don’t even remember because I had been drinking wine. 2 tiny glasses and I was plastered in a cute, bubbly way and not a sloppy mess kind of way… or so I like to think, haha.

Then there was the food – nothing paleo-friendly. I was suuuper hungry from not having eaten much beforehand and from all the wine. I always eat like a ravenous fat kid when I’m drunk… or maybe that’s just all the time. After my appetizer of the entire favor box full of M&Ms (a childhood favorite), I grabbed some food. I don’t even like beans or potato salad, but I got them both along with a BBQ pulled pork sandwich, mac and cheese, and some pickles. I did not eat the buns of the sandwich, but ate everything else against my better judgment.

Friday night, I went to the Dash Berlin show, which was a white party. I have a thing for crazy fake eyelashes and had found these white feather ones at Sephora. They glowed under the black light, which I thought was pretty nifty! I rarely go out anymore. I think the last time was in May? But sometimes, I like to take a break from being my normal freakishly healthy self and party like I’m still in college. And I did just that on Friday night prefunc’ing with Captain and Cokes followed by Tokyo teas (it’s like a long island, but with midori instead of coke) at the venue. I danced for 5 hours with one of my absolute favorite people in the whole entire world! LOVE YOU, KP, happy birthday! Sometime during the night, I also ate a Seattle dog. It’s just not a proper drunken night out in Seattle without one! They’re hot dogs with cream cheese (I also add grilled onions and jalapeños). I find that most non-Seattlites think that sounds disgusting. Don’t knock it till you try it, I’d never eat a hot dog without cream cheese!

Needless to say, I was rather hungover on Saturday. By rather hungover, I mean I was a useless lump in my bed all day. And the memories of all the SAD junk I ate the day/night before were starting to come back to me. You’d think that I would have spent my recovery day getting back on the paleo bandwagon. Well I love fruit and Korean food when I’m hungover. I probably ate most of my fruit from my CSA bag (a week’s worth of fruit) yesterday. I also had bibimbap, which isn’t too bad – brown rice and hot pepper paste (has soy in it), but otherwise healthy full of veggies and meat (all the veggies are cooked in sesame oil). However, it is pretty high in sodium from the hot pepper paste, since I like mine to be super spicy. The fried egg on top after it’s all mixed is absolutely necessary! Best hangover food ever.

I had sooo many peaches and pluots, as well as nectarines and cherries. These are some of the best stone fruits I’ve ever had!

I am fasting today. It has become a necessity with how awful I’m feeling to let my body just cleanse and recover from being bombarded by food and alcohol. I would really like to incorporate regular intermittent fasting into my life. I’m also going to hot yoga in the evening, I can’t believe I haven’t gone in a week! It’s going to feel soooo gooooood! I can’t wait to go back to being fully paleo so I can feel amazing again. But the break was a GREAT reminder of why I eat paleo in the first place!

Ginseng chicken soup

I never really researched what exactly Panax ginseng, or Asian (Korean/Chinese) ginseng does for you. I just believed my mom, grandma, and the wisdom of all my Korean ancestors that ginseng is super good for you in various ways. I’ve had to drink ginseng tea (refrigerated – tastes bad enough cold, worse when hot) pretty much my whole life (like one month out of every year) because my mom thinks I have bad circulation since I’m always cold. Actually, I do have low blood pressure at about <100/~50. She says ginseng is great for blood pressure. I have no idea if the ginseng tea works, but right now my hands and feet aren't cold (they usually are)? My mom has always said ginseng is good for stamina and the immune system as well. It may also lower blood glucose.

I finally did poke around a little online (starting here) and found little scientific research to back up various claims for the wonders of ginseng. However, who am I going to trust? Several thousands of years of Chinese/Korean medicine and anecdotal evidence or modern medicine’s limited research? So I will keep drinking my ginseng tea and eating ginseng infused foods. Possible benefits are enormous, possible negative consequences are at about zero.

Korean ginseng chicken soup
I have no idea what to call it in English, but in Korean it’s called samgaetang. A whole chicken (small) is boiled in a pot of water with pieces of ginseng, whole garlic gloves, and “dechu” (some sort of dried date) for about 2 hours until the chicken is cooked through. The chicken is stuffed with sweet rice. My mom used a free range chicken and left out the dechu at my request. I of course didn’t eat the rice. But I ate pretty much the entire chicken breast and a leg (what, it was a small chicken!) with some young radish kimchi. I had the broth on the side. I like the mild flavors and to me, it tastes a tiny bit medicinal because of the ginseng. Unlike regular/American chicken soup, it’s not salty at all and might actually do something to help you feel better when sick by boosting your immune system, rather than just filling you up with noodles and making you more sick.

More paleo Korean food

I apologize for the lack of posts this week. I’ve been super lazy! I messed up my lower back during my 8 hours of trying to get comfortable at the airport. I went to Bikram on Tuesday and realized that I wasn’t actually injured. I had full flexibility and range of motion without pain – heat is amazing for loosening up everything. I felt so much better… which is why I decided to go climbing afterwards. Dumb, because it just clenched up again. I usually think of climbing as an arms and legs thing, but it’s really a whole body activity. I learned that hot yoga should always be done after strenuous activity, not before. Luckily, I had a very nice person crack my neck and back for me yesterday and I am feeling much better. I haven’t been cooking and I have very little food to post here. I was also showing someone around Seattle and ended up not being as paleo as usual, which probably contributes to my overall lethargy.

Have I mentioned how much I love having dinner with paleo friends? Last night was no exception with more than half the table being paleo. The server caught on that none of us ate mashed potatoes and wanted extra veggies instead with our steak. I loved all the conversations we had about food and health! While it’s always nice to debate with vegetarians, vegans, and SADers, it’s wonderful to share knowledge and experiences with like-minded eaters. They suggested that I should try to meet Robb Wolf (whom they know personally) in person the next time I’m in the bay area. That would be awesome!

Paleo or not, I’m lucky to have some truly amazing and inspirational people in my life. But then again, how many mediocre people do you know once you actually know them? I’m starting to think that everyone is a potential future friend.

Anyway, I had lots of simple Korean food this week!

Beef knuckle bone(?) broth
I no longer require salt for my broths – just black pepper, green onion, and minced garlic. I think it’s important to try and eat as much of an animal as possible instead of just the muscle. Not only to minimize waste, but for all the nutrients as well. The lumps you see are bits of fat, meat, and cartilage.

Pan fried pork and kimchi
At Korean BBQ places there is always pork belly slices on the menu. I personally prefer sliced pork shoulder because it’s more meaty and less fatty. I just cooked the pork slices in a frying pan along with some garlic. When the pork fat started collecting in the pan, I just added some kimchi. Kimchi is best eaten uncooked so you can get the healthy bacteria, but I like the flavor of cooked kimchi. I wrap everything up in red leaf lettuce as I eat.

I’m planning on cooking a whole bunch this next week, so I’ll be posting more often again. My friend gave me elk round steaks and ground elk that his friend hunted. Yum! I’m also starting MMA classes as soon as my back is back to normal! That should be interesting!

I can stay paleo eating Paseo! *happy dance*

Back to posting about food! Yesterday was full of all sorts of food! I even deviated a little from being paleo!

Non-marinated Korean-style boneless beef short ribs

One of my favorite ways to eat beef since it’s so quick and tasty! Cut the meat and in a bowl, mix it with some salt, pepper, and sesame oil. The sesame oil adds a really nice flavor and is what makes it Korean to me. In a pan, I start cooking the garlic, onions, and mushrooms before adding the meat.

Cuban Roast Plato Paseo
Oh how I love Paseo. The Cuban Roast sandwich there may be the best sandwich I’ve ever had in my life. Yesterday was the first time I went since adopting the paleo way of eating. Since the best part about my beloved sandwich is the amazingly succulent marinated roasted pork shoulder, I decided on getting the Cuban Roast Plato entree. All entrees come with a “house salad consisting of crisp romaine lettuce, razor thin sliced purple cabbage, pickled julienne cut beets & cilantro sprigs drizzled w/ our house vinaigrette & extra virgin olive oil. Accompanied w/ fluffy jasmine rice, critically acclaimed vegetarian black beans & seasoned corn on the cob.” I asked for just the meat with extra salad. The guy taking my order looked at me like I was crazy to pass on their beans and corn. Apparently extra means gigantic at Paseo… look at all that salad! It’s SOOOO good with the cilantro and the beets! I didn’t miss the rice, beans, or corn at all! I did miss the caramelized onions and jalapeños that come on the sandwich though, I’ll see if I can add those next time! Their onions are pretty special!

Vegetable Delight Djan’s Thai Restaurant
I suppose ordering one of the coconut milk based curries with steamed veggies would have been more paleo, but I was craving some stir-fry. I chose the vegetable delight from the wok fare section of the menu: “Choice of meat stir-fried with assorted vegetables: broccoli, mushrooms, spinach, carrots, napa and cabbage.” I went with chicken. It was a bit salty to eat without rice, but still very good with all the veggies!

A non-paleo treat that doesn’t make me sick!
Since I was in Wallingford, I could not keep myself away from Molly Moon’s Homemade Ice Cream. Sometimes they have non-dairy coconut milk ice cream, but not yesterday. So I got a kid’s scoop of their thai tea ice cream. It was deeeelicious! Since I’m not 100% strict paleo, a little quality ice cream here and there is a welcome treat. By quality I mean as natural as possible without all sorts of chemicals added in. I find that I don’t get sick after eating a little ice cream like I do with cake.

An active day and a lazy day

I was pretty active on Monday! I skated for 45 minutes. I hadn’t skated for over a week and was tired, but was happy with how I skated. I met an older lady on the ice who had “quit” back in ’81 who was tearing it up out there! I hope I will be able to skate well into my senior years. Right after skating, I did an hour of hot POWER yoga! That was intense!! I both loved and hated every minute of it. It was definitely a workout with every muscle burning at one point or another.

Yesterday was a super lazy day. I went shopping for a couple hours, but didn’t find anything I liked. I’m pretty disappointed in this season’s clothes. I napped, I ate, I watched tv… I was supposed to go to a BBQ but my allergies got the best of me.

Now for some recent eats!

Kimchi stew
Kimchi, water, pork, and onions – super simple! This would usually be eaten with rice and other side dishes. I just ate it by itself with some unsalted and unoiled seaweed (nori) to tone down the spiciness.

Prime rib omelette
I went out to breakfast with a friend yesterday and chose the prime rib omelette – eggs, beef, tomatoes, green bell peppers, onions, and mushrooms. I asked for no cheese, no hashbrowns, and no toast. I usually ask for a side of tomatoes or fruit instead.

Marinated grilled shrimp served on mixed greens with homemade dressing! I love shrimp this way. Ask for the recipes if you want it, I’m too lazy to find the links right now.

T-bone steak
I went to Bill the Butcher to buy steak for the bbq. I was pretty disappointed in the selection yesterday, I must have gone on a bad day. I usually get ribeye or tenderloin, but they just had T-bone. The meat was excellent quality and had great flavor. I also cooked it perfectly medium rare and it turned out to be the best T-bone steak I’ve ever had!

Paleo Korean food

I went to hot yoga this morning! I did the 65 minute hot hatha class. 105 degrees, 40% humidity… sounds awful, doesn’t it? I absolutely love hot yoga. The heat and the massive amounts of sweat pouring out of all the pores in your body aside, your body feels amazing – detoxed, refreshed, and rejuvenated! I seriously walk out of the studio with a body high every time. It definitely gets easier the more you go. The first time I went I felt so nauseous afterwards! I’m starting out with hot hatha for two reasons. 1. Hot Yoga Inc has a new student special where it’s $10 for 10 classes. 2. Hatha is low intensity. I’m trying to get used to the heat before I move on to real hot yoga – BIKRAM! Even with hatha, you get your heartrate going!

And now for some eats from the day! You can still eat a wide variety of cuisines while staying paleo and Korean is definitely one of them. I’ve decided that the majority of Korean dishes already are or can easily be paleo, you just have to skip the rice. I’ll definitely post more paleo Korean food in the near future!

Korean meatballs


According to my mom, Korean meatballs are already paleo. Sauté onions, green onions, carrots, and garlic. In a bowl mix the veggies with ground beef and some salt and pepper. Cook completely in a pan and then let cool. Beat a couple eggs together, dip the meatballs into eggs and cook again until the egg coating is done. I ate many more than pictured for lunch today… nom nom.

Korean beef stew (galbitahng)


This started as plain beef bone broth, which is the base for many Korean stews/soups. It’s now a simple beef stew with rib meat and some radish. It’s served with a little bit of minced garlic and chopped green onions, salt and pepper to taste.

Mid-day snack plate


Celery, baby carrots, prosciutto and hot coppa. The hot coppa has a couple of nonpaleo ingredients listed as being less than 2%… 98% is good enough for me! I LOVE cured meat. Perfect for snacking with no cooking required.
