I made coconut macaroons!!!!!!!

And I’m obviously really excited about it!!! Thanks to a bad case of DOMS in my right bicep, I decided to take a rest day! Just my right bicepI have so much time to eat on my rest days that I end up grazing all day. I usually end up experimenting, too! So I made coconut macaroons! Yay for paleo baking! 🙂

Coconut Macaroons attempt #1
I never liked coconut until I started eating paleo. Now I love it. My tastes have changed so much! I used this recipe with all the appropriate paleo substitutions.

Ingredients:
1 large egg white
1 Tbsp coconut palm sugar
1/4 tsp vanilla extract
3/4 cup shredded unsweetened coconut
(I didn’t have any almond extract.)

Preheat oven to 300 degrees. I lined the baking sheet with foil and lightly greased it with coconut oil. Stirred all the ingredients together (adding the shredded coconut last). I chose to make about eight little walnut sized balls. Because the coconut palm sugar is brown, my macaroons were already golden brown. So I couldn’t really tell when they were done! I just left them in the oven for 15 minutes and they tasted done.

I’d definitely prefer flaked coconut over what I used, which was finely shredded and lent a gritty texture. It was the perfect amount of sweet even with the coconut being unsweetened.I enjoyed them. I prefer macaroons to be a bit more gooey? I’ll definitely be experimenting more in the near future!

Now for a couple of meals from yesterday. I also ate some leftover roasted pork, prosciutto, a Larabar, and lots of fruit!

Buffalo Taco Salad
Not sure what else to call this. I had ground red bibb lettuce, ground buffalo, red onion, bacon, pico de gallo, pickled jalapeños, and avocado in my fridge, so I just threw it all together! Soooo good. I think pico de gallo makes a great salad dressing. I bought the pico at Whole Foods the other day because I was too lazy to make my own. I will say that making your own definitely tastes better and fresher!

Steak with chard and onions
My CSA box contained rainbow chard this week! I first made this chard dish here. Great accompaniment to a huge grassfed ribeye! Looks small in the pic, but this is a giant plate. Actually, don’t I always eat chard and steak together like this? I eat so much steak because it’s so easy to make. I should really start branching out… I love steak.

  2. So, I don’t have the palm sugar, but am thinking of trying honey or agave. I’ll let you know how it goes!
